Every vine is different....
Of course we all know this, but pruning reminds us of it perfectly.
Every tiny difference between vines is noticeable as we stop and interact with each of them individually.
How do we create the environment to allow it to develop to its best potential?
From old to young.. each one is unique.

We prune late so the transition from old to new is as short as possible.

Transition time.....

Each year since 2013, we have made a traditional method sparkling Blaufränkisch from our best wine.

Inspired by the rich history of sparkling reds from Australia, we have produced 60-80 bottles annually - mostly for our own enjoyment!

They are not disgorged. The 2013, with 10 years lees ageing, is now mature and delicious.

In 2024 we decided to increase the volume and created 500 bottles of the 2022 vintage.

They will rest for the next few years at least...and then we look forward to introducing them to you (and us 😁)

Pressing the final fermenter of #Blaufränkisch last week.

We press each one individually in our small, gentle press.

It's a slow, but very satisfying way to pass the time...

And it has become a tradition to do it outdoors with this year continuing that approach. The colour of the juice takes on an extra vibrancy in the Autumn light, and the flavours are enhanced by the smells of nature all around. The juice is being collected back where it all began.. outside in the fresh air..

This year we had 20% whole bunch - 3 weeks at the bottom of the fermenters.

Bright, fresh, elegant juice.
